I took a sip and immediately got this lovely maple sweetness, with hints of moist white nougat and beeswax. The honeys came through strong, but there's even more tannicity than expected, making it a bit drying. It reminded me of raisins poached in Sauternes, and that combination with similar ripe apples is just delightful. There's a Meursaulty side to it, with little malolactic giving a creamy touch. The finish remained a little oaky at first, but then it shifted to pine and frosted holly. The old bottle effect might be why there's a distinct goji note too. Overall, it's a classic style, and I'm loving how the oak became pine over time. 😊
