Right, so first sip... whew, this is proper funky. Like walking into an old fermentary where someone left some green olives soaking in white wine vinegar. It’s got that rotting bananas thing going on, but in a weird, charming way.
Then it gets a bit gentler, thank god. Still a bit sharp, mind you, very acetic. But there’s this clean, almost ueber-clean edge, like a wood-fired still did its job perfectly. Tastes like model paint smells, but also like lamp oil? Don’t ask me how that works.
The finish is long. Like, LedZep-long. It just hangs around, kinda like a dirty rum crossed with... honestly, the first thing that popped into my head was a samurai. A very specific one. 🤷♂️
And right at the end, there’s this salty, umami-y samphire note. Not Jamaican, not Guyanian... definitely its own thing. A bit like varnish from that Varnish & Varnish’s place, but played on a piano by someone like Sakamoto or Hiromi. It’s an estery crossbreed, for sure. 🎹
