First sip feels... long, and oddly cheerful on the palate. Those fun spices—clove and cumin?—pop up right away, remind me a bit of my nan's kitchen at Christmas. There's cider apples in there, for sure, and just the tiniest hint of honeysuckle if you really hunt for it. It’s a touch rustic, honestly, like foraging near-wild pears in an autumn hedgerow. Almost austere in a way, like a Lada—charmingly acrid, very herbal. Get little orchard fruits, but it's also strongly reminiscent of holly eau-de-vie from that French holiday. Slightly oily mouthfeel. You get green walnuts from the sherry influence, I reckon. Water works very well here to open it up. Overall? Earthy. Robust. Has this bison grass vodka thing going on, which is fun. Goes anywhere—could drink it by a fire or on a sunny afternoon. The finish? Death-by-IPA levels of pleasant bitterness. It’s just nature in a glass, innit? 🌿 A far fruitier version is out there, but this one still has apples at its core. Really enjoyable. 😊
