Popped it open and just stuck my nose in—blimey, it's like walking past a bakery first thing. Fresh soda bread, plain oatcakes, a bit of hay and straw. Really immediate, no messing about. Sip it young and it’s dead easy, almost too easy. That fully bourbon cask vibe gives it heaps of pollen and grass, but there’s a soft wine cask whisper in the back. Think gooseberry and lemons, maybe a little green tea with lemon. Tiny green fruit notes, barely ripe. Gets this minerally thing as well… wet beach pebbles and a faint wood sap tang. Not heavy, keeps it light. Just a proper sunny afternoon dram.
