Well, colour of white wine, first impression. Nose is all very ripe pears, preserved peaches, honey, oranges… really, honestly, just so inviting. Thinking of Jean Marie makes me smile. On the palate… wow. Dough, shortbread, a little cornflakes. Then ripe apples, a touch of citrus, and that very pleasant small salty touch. Notes of apples and pears again. And yes, there’s that pop of popcorn and grist, with touches of cedar shavings. No unnecessary wood or wine in the way, which is a treat. It’s a perfect apéritif. The finish? Surprisingly long. Awesome notes of thyme honey, a chalky dryness, and a touch of fresh armagnac lingers. Fresh croissants, too! Totally impeccable. Really, so good! This bottling, single hogshead and at 43% ABV… better at 43 than it would have been at higher strengths, I reckon. Little bottlings, big whiskies! Nice ripe age. Nice outturn. Just beautiful. 😊
