Proper seaside dram, this. Right off the bat it’s full of salty liquorice and this lovely waft of lemon oils, but maybe just ever so slightly simple. Then you get that oily hit – full of smoked olive oil, proper iodine and tarry rope, ashy, with a deeper and drier peat smoke flavour that’s all anchovy butter. 🫒🔥 It’s a bit lacking a little complexity if I’m honest, but the finish is long and briny. Texture’s oilier and thicker, with a kick of white pepper and touches of fish sauce. Coal smoke, dried seaweed, nori… almost pickled mussels in there. There’s a sense of roots and medicines – kelp, touches of gentian – feels pretty emblematic of this era. Lots of seawater, pickling juices, straw, and those smoked olive oils just linger. 🌊🧂
