Nosing it, you get that lightly dusted spice straight away and then the classic gentle heather-and-honey soul just shines through, proper coastal freshness. Eucalyptus and pine resin hang around, but it’s all leaning towards cracked pepper rather than bonfire. Not utterly mind-blowing that way, but wonderfully gentle — like a very serene, very zen Orcadian morning. The taste is surprisingly fruity and pastry-like, straight apple juice, wild blueberries and a whiff of cake batter before the malty barley comes through, comfortably close and warming. There’s apricots, mirabelles, and a lick of beeswax, and right at the back, a tiny whisper of small whelk shell — briny, almost shy. Finish is fairly long, still that pine resin and coastal air lingering. Simply very good. 🌊🍏🫐✨
