Popped the cork and it’s almost water-white in the glass, dead pale like a very lean white wine. First sniff is all ashy smoke and proper maritime peat, that sea-spray thing with a little tickle of salt. Not heavy, just clean. Sip it and it’s simple but flawless. Smoked fish, lemon peel, a wee bit of walnut skin and grape pips. There’s a lovely bitterness running through, almost peely, like chewing on lemon zest. It’s pure, no messing about. Just smoke, citrus, a bare pinch of salt, and a dry, ashy finish that makes you want another go. 👌
