Right, so this one’s an absolute seaside belter. Nose is pure oysters and smoked fish, but not in a heavy way – it’s got this crystal clean thing going on, like very pale white wine with a squeeze of lemon. Salty air and a touch of green oils, maybe from some sort of kelp? There’s a whisper of green apple peel and grape pips too. On the palate, it’s properly ashy and very smoky, like a kiln that’s just been doused. Maritime peat, absolutely. Not a big booming peat, but a clean, medium-weight smoulder with a lovely bitterness – that walnut peelings vibe, dry and slightly tannic. The salt just lifts everything brilliantly. The finish is pure, simple, with those peely lemon notes drying into soft ash and a little more salt. Flawless for what it is, honestly. These are unguilty pleasures, every sip feels scrubbed clean by the sea. 🦪🍋
