Tonight, I cracked open a fresh pour and, goodness, it's like a walk through a damp herb garden after rain 🌿. First hit is this lovely, almost awesome chalky feeling, right next to that damp white soil smell. Then it opens up – boom, mangos and a bit of preserved yellow peaches, like a jar of summer jams. There's this crystalized tropical fruit thing going on, with a hint of mirabelles peelings and fresh leaves. The texture feels really clean, like crushed slate or marl, with a great white Bourgogne freshness. It’s not just wood I’m tasting, it feels like time itself, and there’s this utterly abundant, oneness quality. It finishes with this slightly salty, mineral touch, almost like white peaches and salinity on a breeze. Really moreish. 🥃
