Right, so this one’s got a tad more approachable feel right off—proper malty backbone but there’s something that elevates it above its sibling cask a notch, y’know? Nose is wonderfully rich and textured, lovely consistency with the palate too. biscuity. Like walking into a bakery that also happens to be storing straw and fresh linens. Globally more rounded and sweeter nose, lemony but not sharp, more like lemon barley water with a yeasty, light mineral tang underneath. The palate’s got that same malty sinew, maybe a faint fabric note? Like clean cotton with some seasonings sprinkled in. Almost a whisper of old-fashioned medical qualities—herbal, slightly antiseptic, like a bouquet garni steeping away. Then that autolytic richness rolls in, doughy and savoury, ties everything together nicely. 🍋🌾 Properly moreish.
